  • Crisfield Crab Cake – Inspired by Chef Swift’s Maryland roots, the Crisfield Crab Cake has emerged as one of Prologue’s signature dishes, drawing praise from guests and locals alike.   • Gulf Red Snapper – Bright, colorful and layered with what Chef Swift describes as “Floribbean” flavors, the Gulf Red Snapper pairs sweet corn maque choux, mango pico de gallo and charred scallion salsa verde to create a dish that’s both balanced and vibrant. “I love the Floribbean flavors in this dish,” Swift said. “It’s sweet with just a hint of spice.”
  • Baby Kale & White Sweet Potato Salad – Proof that a salad can be every bit as satisfying as an entrée, this guest favorite combines baby kale, white sweet potato, feta, dried cherries, toasted pistachios and sorghum-malt vinaigrette. “It has hearty flavors for a salad,” Swift said. “It almost feels like a fall dish, but it works beautifully in the summer.”
